Spinach and Artichoke Dip

Hi everyone! I hope you had a very merry Christmas! We have had a wonderful week full of family, food, relaxing, and even snow! Oh, and of course Christmas jammies!

I can’t believe that it’s now time to usher in 2013. This year was amazing and I’m really looking forward to the coming year. You too? What are you looking forward to most?

Can I make a suggestion? Make this dip for your New Year’s festivities. It’s a family favorite and I think you will enjoy it too! It’s de.lish. We had it on Christmas Eve and I will be making it again for sure!

Spinach and Artichoke Dip

1 8oz package cream cheese, softened
1/2 cup mayo
1 6oz box frozen chopped spinach, blanched and excess water squeezed out
1 14oz can quartered artichokes
1 8oz can sliced water chestnuts
2 cloves garlic, minced
1/2 cup red pepper, diced
3/4 cup shredded parmesan cheese, divided

Mix all ingredients together, less 1/4 cup of the parmesan. Put the dip in an oven safe dish and top with remaining 1/4 cup parmesan. Bake at 350 until hot and bubbly. Devour with tortilla chips, crackers or a spoon, whatever you can get the quickest. (Recipe can be made ahead of time and baked when needed.)
